Atkins Parmesan Zucchini Noodle with Lemon

  • Serves: 4
  • Calories: 80
  • Net Carbs: 2.0 g
  • Protein: 3.0 g
  • Fat: 7.0 g

Ingredients

  • 2 zucchini
  • 3 tbsp grated Parmesan cheese
  • 1 tbsp lemon juice
  • 1 tsp grated lemon zest
  • 1 1/2 tbsp olive oil
  • salt & pepper to taste

Directions

  • Thinly sliced zucchini lengthwise to make it looks like noodle.
  • Then, combine all ingredients in a large mixing bowl, toss and serve.
